1 kg Zucchini
1 red Pepper
1 Green Pepper
1/2 Cup Salt
2 Cup Sugar
2.5 Cup white Vinegar
1 Cup Water
2tspn celery Seeds
Finely chop all vegetables
Combine veges in a large bowl
Sprinkle over salt and cover with water and leave at least 2 hours or overnight.
Drain and rinse thoroughly in cold water and drain.
In a pot boil, sugar vinegar water, tumeric and celery seeds for 3 minutes. Add veges and cook for 15 to 30 mins (until veges are soft)_
Spoon into hot, dry, clean jars and seal with wax
